Tonight begins the start of Passover. Lucia Schnitzer, co-owner of Luci’s Healthy Marketplace, has come up with the below dish for those celebrating the Jewish holiday who still want to indulge in some comfort food this week. Passover ends at nightfall on Saturday, April 11th.

Cauliflower Crust Pizza
½ large head cauliflower (makes around two cups shredded)
1 egg
1 cup shredded cheddar and mozzarella cheese
1 clove minced garlic
½ tsp dried oregano leaves
Handful of matzah meal (optional)
Toppings (be creative with your own choice of toppings)
½ cup marinara sauce
¾ cup shredded cheese
½ cup diced orange, yellow and red peppers
½ cup of mushrooms
½ cup sliced onions
½ cup of chopped basil
Instructions
Preheat oven to 450 degrees F. Shred the cauliflower into small crumbles using a cheese grater or food processor. You will make around 2 cups of crumbles. Place the cauliflower in the oven for 10 minutes or microwave for 8 minutes to dry it out then give it a chance to cool. Thoroughly mix in the egg, cheese and spices. Spray pizza stone or baking sheet with a good quality oil cooking spray and spread out a handful of matzah meal (optional) all over. Place the cauliflower dough in the center of the stone and pat down into a 9-12 inch round crust. Then bake the crust for 15 minutes until golden brown. Check on the crust after 12 minutes for browning since the pizza will still go back into the oven with the toppings and will get even darker. Turn the oven up to broil. Tope the crust with marinara sauce, leaving a ½ inch border around the edge. Sprinkle on ½ cup of the cheese then the peppers, onions, whole roasted garlic and then sprinkle on the rest of the cheese. Broil the pizza for 3 minutes until the cheese melts and the veggies are hot.
