FOUND:RE Phoenix Hotel and Compa Spirits are pleased to present a four-course mezcal pairing dinner featuring dishes prepared by Executive Chef Shane Jackson designed to pair perfectly with tastings from Esrtwhile Mezcal, a woman-led social conscious distillery.
Courses and pairings are as follows:
Amuse Bouche — Pacific Oyster with madre quiche ice and fresno pearls
First Course — Fresh Corn Porridge with mezcal cured quail egg, wild mushrooms, agave roasted peppers and chapulines
Second Course — Seabass Crudo with mango water, hibiscus oil and chile
Third Course — Lamb Shank Barbacoa with habanero, clove, sour orange and gremolata
Dessert – Dish to be revealed at event
